Vegan Recipes : Vegetable Risotto
Ingredients
- Rice
- Onions
- Mushrooms
- Peppers
- Small florets of Broccoli
- Spring Onions
- Peas
- Herbs
- Little Paprika
- Scheeze [vegan cheese]
Method
- Fry the vegetables in oil until soft. Add rice paprika, seasoning and herbs. Add boiling water. Gently simmer until all water absorbed.
- Grate some Scheeze and mix it into the above mixture until melted. Serve.
