Vegan Recipes : Savoury Millet
Serves 4
Ingredients
- 100g Millet
- 600ml Water
- 50g Vegan Margarine
- 2 medium Leeks
- 2 large Carrots
- 4 Celery Sticks
- 56g Flaked Almonds
- 3tbsp/34mls Chopped Parsley
- 1tsp/5ml Dried Sage
- ½ Lemon [grated rind and juice]
- Salt and Pepper
Method
- Cook the millet in the measured boiling water until just tender and all the water has been absorbed. Slice the leeks, grate the carrot and finely slice the celery. Melt 50 g margarine, add the vegetables and sauté for 10-15 minutes, stirring frequently.
- Add the millet and stir over gentle heat to keep warm. Stir in the herbs, lemon juice and rind and serve.
