Vegan Recipes : Rhubarb Crumble
Serves 4
Ingredients
- 900g Rhubarb cut into 1″ pieces
- ½ cup Sugar [preferably brown]
Crumble
- 250g Wholemeal Flour [or a combination of white and brown]
- 175g Vegan Margarine
- 175g Brown Sugar
Method
- Preheat the oven to 200C/Gas Mark 6.
- Put the fruit into a lightly greased dish.
- Put the flour into mixing bowl and rub in the margarine until like bread. Add sugar.
- Pour mixture evenly over the rhubarb and bake in oven for 30-40 mins or until fruit is tender and the top is lightly browned.
Other variations could include using plums, blackberries, apples, apricots or gooseberries.
