Vegan Recipes : Nut Roast
Serves 4-6
Ingredients
- 1 medium Onion [chopped]
- 25g Vegan Margarine
- 325g Mixed Nuts [i.e. peanuts, walnuts, brazils, cashew nuts, etc.]
- 110g Wholemeal Bread [made into soft breadcrumbs]
- 2 Carrots [grated]
- 300ml Vegetable Stock
- 10ml Yeast Extract
- 5ml Mixed Herbs
- Salt and Pepper
Method
- Sauté the onion in the margarine until transparent. Grind or chop the nuts, add the grated carrots and breadcrumbs. Heat the stock and yeast extract, then combine all the ingredients together and mix well. The mixture should be fairly slack.
- Turn into a tin, level the surface, sprinkle with a few sesame seeds or retain a small amount of the wholemeal breadcrumbs and use instead. Bake in the oven at 180C/350°F/Mark 4 for ½ hour until golden. brown.
