Vegan Recipes : Millet Au Gratin

Using the previous recipe Savoury Millet, the mixture can also be used to make Millet Au Gratin by making a basic sauce as follows and then by stirring in the millet mixture. Slice tomatoes and pop in oven or under the grill to brown top.

  1. Melt the remaining margarine in a saucepan.
  2. Stir in the flour and cook for 1 minute.
  3. Stir in the milk, herbs, lemon rind and juice, bring to the boil.
  4. Reduce heat and simmer for 2 minutes.
  5. Pour it over the vegetables and stir well.
  6. Season.
  7. Pop under grill for a few minutes and serve hot.
