Vegan Recipes : Lentil & Buckwheat Slice
Serves 6
Ingredients
- 100g Buckwheat
- 1 medium Onion
- 1 medium Carrot
- 2tbsp/30ml Oil
- 175g Red Lentils
- 900ml Vegetable Stock
- 2tbsp/30ml Chopped or dried parsley
- 1tsp/5ml Yeast extract
- Salt and Pepper
Method
- Chop the onion and carrot. Heat the oil and sauté them until the onion is transparent. Add the Buckwheat and lentils and the remaining ingredients. Bring to the boil, reduce heat and simmer for approximately ½ hour until all the liquid is absorbed.
- Press the mixture into a tin and bake in the oven at 200C/400°F/Mark 6 for ½ hour.
- Serve hot or cold in wedges.
Note: Can be eaten hot or cold
