Vegan Recipes : Green Lentil Curry
Serves 4
Ingredients
- 2tbsp Oil
- 1 Onion [chopped]
- 1 clove Garlic [crushed]
- 200g Mushrooms [sliced or quartered]
- 150g Green Lentils
- 1tbsp Curry Powder
- 500g Spinach (note: frozen spinach may be used)
Method
- Heat oil and fry the onions until transparent, add garlic and mushrooms and fry for approximately 5 minutes.
- Add the lentils and mix in the curry powder. Then add sufficient water to cover the lentils. Simmer gently with a lid on for approx. 35-40 minutes until all the lentils are soft, stirring occasionally. After approx. 20 minutes check to see if any more water required.
- When ready add spinach and add any salt and pepper required. If frozen spinach is used, add a little earlier to ensue they are cooked and all water absorbed.
Note: Serve with rice.
