Vegan Recipes : Green Lentil Curry

Method

  1. Heat oil and fry the onions until transparent, add garlic and mushrooms and fry for approximately 5 minutes.
  2. Add the lentils and mix in the curry powder. Then add sufficient water to cover the lentils. Simmer gently with a lid on for approx. 35-40 minutes until all the lentils are soft, stirring occasionally. After approx. 20 minutes check to see if any more water required.
  3. When ready add spinach and add any salt and pepper required. If frozen spinach is used, add a little earlier to ensue they are cooked and all water absorbed.

Note: Serve with rice.
