Vegan Recipes : Fruit Scones
Makes 8
Ingredients
- 225 g Plain flour (preferably half white and half wholemeal)
- 2 tsp Baking powder
- 50 g Vegan Margarine
- 50 g Sugar
- 75 g Raisins
- ½ tsp Mixed Spice (optional)
- 150 ml Soya Milk
Method
- Preheat oven to 220C or Gas Mark 7.
- Sift flour and baking powder and rub in margarine until mixture resembles breadcrumbs. Add the fruit, sugar and mixed spice. Add the milk or water gradually and mix to a soft dough.
- Roll out the dough on a floured board to a thickness of 1cm/½″ thick. Cut the scones out using a 5cm cutter and place on floured baking sheet. Bake in oven for 12-15 minutes until golden brown. Cool and serve.
