Vegan Recipes : Chocolate and Banana Cake
Makes 6 portions
Ingredients
- 280g Plain flour [Wholemeal or White]
- 2tsp(heaped) Baking powder
- 56g Cocoa
- 225g Sugar
- 8tbsp Oil
- 10fl oz Water
- 1 medium Banana
Topping
- 1oz/25g Vegan margarine
- 1 tbsp Water
- 80g Sugar
- 25g Cocoa
- 1tsp Vanilla essence
Method
- Preheat oven to Gas Mark 5.
- Mix the first four ingredients together. Add the rest of the ingredients.
- Pour the mixture into a tin and bake for approximately 40 minutes.
- For the topping: Gently melt margarine over a gentle hear, then add other ingredients and mix thoroughly, boil for approximately 1 minute stirring all the time.
- Beat until mixture cools and thickens. Pour over top of cake.
Note: Can be cut into portions and frozen for later use.
