Vegan Recipes : Cauliflower Au Gratin
Serves 4
Ingredients
- 1 medium Cauliflower [cut into florets]
- 1 medium Onion [chopped]
- 2 Carrots [sliced]
- 100g Mushrooms [cut into quarters]
- 110g Cooked Butter Beans
- 1 dsp Engevita Nutritional Yeastflakes [optional]
- Vegetable Stock Cube
Béchamel Sauce
- 1 lt unsweetened Soya Milk
- ½ Onion [grated]
- 100g Vegan Margarine
- 100g Flour
Method
- Put onion in soya milk, put on heat to warm.
- Make white roux and gradually add the warm soya milk.
- Add the vegetable stock cube, take off heat, add nutritional yeast flakes and put aside.
- Sweat the onion, mushrooms and carrot in the oil. Add cauliflower and sweat for a further 1-2 minutes.
- Stir in the béchamel sauce, turn into dish and bake 15-20 mins until golden brown on low heat.
