Vegan Recipes : Cauliflower Au Gratin

Method

  1. Put onion in soya milk, put on heat to warm.
  2. Make white roux and gradually add the warm soya milk.
  3. Add the vegetable stock cube, take off heat, add nutritional yeast flakes and put aside.
  4. Sweat the onion, mushrooms and carrot in the oil. Add cauliflower and sweat for a further 1-2 minutes.
  5. Stir in the béchamel sauce, turn into dish and bake 15-20 mins until golden brown on low heat.
