Vegan Recipes : Buckwheat Bake
Serves 4-6
Ingredients
- 1 medium Onion [chopped]
- 4 Tomatoes
- 2tbsp/30ml Oil
- 75g Buckwheat
- 25g Long Grain Rice
- 300ml Water
- 1tsp/5ml Dried Basil
- Salt and Pepper
Method
- Fry the onion until transparent. Slice and add tomatoes and stir until softened. Stir in the buckwheat and rice and cook for 1 minute.
- Add remaining ingredients. Bring to the boil, reduce heat and cover and simmer until the liquid has been absorbed [approx 20 minutes]. Season and turn mixture into a tin and bake in the oven at 190C/375°F/Mark5 for ½ hour.
Note: Can be served hot or cold.
