Vegan Recipes : Buckwheat Bake

Method

  1. Fry the onion until transparent. Slice and add tomatoes and stir until softened. Stir in the buckwheat and rice and cook for 1 minute.
  2. Add remaining ingredients. Bring to the boil, reduce heat and cover and simmer until the liquid has been absorbed [approx 20 minutes]. Season and turn mixture into a tin and bake in the oven at 190C/375°F/Mark5 for ½ hour.

Note: Can be served hot or cold.
