Vegan Recipes : Borlotti Bean Goulash
Serves 4
Ingredients
- 2tbsp Olive Oil
- 1 Onion [chopped]
- 2 Carrots [sliced]
- 1 tsp Caraway seeds
- 2 Red Peppers
- 250g Sweet Potato [diced]
- 2tbsp Paprika
- 1tsp Tomato Puree
- 660ml Vegetable Stock
- 425g Canned Borlotti Beans[drained]
Method
- Heat the oil and fry the onion, carrots and caraway seeds for 5 minutes. Add peppers, sweet potato, paprika and cayenne and fry for a further 3 minutes.
- Stir in the stock, tomato puree and the borlotti beans. Bring to the boil, cover and cook over a low heat for ½ hour.
