Vegan Recipes : Apple Pie

  1. Set oven to 200C/Gas mark 6.
  2. Sieve the flour and salt into a bowl.
  3. Rub the vegan margarine into the flour until the mixture looks like fine breadcrumbs. Make a well in the middle and slowly add water until mixture stays together but isn't sticky.
  4. Don't handle too much, and then put in fridge.
  5. Meanwhile: Peel, core and thinly slice the apples.
  6. Roll the pastry out to about ½ cm thick on a floured surface. Cut out a circle big enough to cover the bottom and sides of an 8" pie dish. Bake for 10 mins.
  7. Take out of oven and put apples onto pastry base. Sprinkle with sugar. Cover top with another circle of pastry. Seal up the edges with soya milk. Brush top with milk and pierce top with a knife.
  8. Bake for another 20-25 mins until pastry golden. Serve with soya custard.

Note: If there are spare blackberries available - add some to the apple.
